Moroccan Chicken with Lemon and Green Olives Tagine

The two things that stuck out the most to me during my stays in Morocco were the exceptional hospitality and the outstanding food.  While I can't share a recipe that replicates the welcoming spirit of the Moroccan people, I can share one of their delectable dishes. 

My favorite course during the never ending meals in Morocco (or so it seemed) was the traditional "tagine." Whether made with chicken, lamb or beef, this flavorful stew of meat and vegetables was always slow cooked to spicy, flavorful perfection...and somehow I aways made room for it.

The Chicken with Lemon and Green Olives Tagine was one I always enjoyed at weddings and perhaps that is why it is so standout in my memories.
